Rhubarb Season

What is rhubarb? A beautiful redish pinkish root you can use to jazz up any fruity dessert. I personally like to cut it in chunks and throw it into my fruit crisps. This recipe uses delicious summer rhubarb I purchased from my local farmers market along with some other fresh seasonal fruits. It takes 15 minutes to put together and warms your heart with each bite. 

Ingredients:

 

4 stalks of fresh rhubarb, washed thoroughly and chipped into 1/2 inch bites

3 apples (I like granny smith or pink lady for the sweet and sour flavor) chopped into 1/2 inch bites

1/2 cup fresh strawberries chopped into quarters 

3 Tbsp white sugar

Juice of one lemon

1 stick (1/2 cup) butter or margarine slightly softened 

1/2 cup oats

1 1/2 cup flour 

1 tsp cinnamon 

 

Directions:

 

1. Preheat oven to 375 degrees.

2.Combine the rhubarb, apples, and strawberries in a bowl with white sugar and lemon juice. Set aside.

3. Using your hands (your best tool!) mix the margarine/butter with oats, flour, and cinnamon until a crumble forms.

4. Pour the fruit mixture into a deep dish pan (9 inch) and top with the crumble.

5. Bake for 1 hour, the fruit will be bubbly and juicy and the crumble will be browned and crunchy.
