Kid Friendly Tuna Patties

As a mom I struggle with getting my daughter to eat healthy, protein filled dinners. When the day flies by I need something I can whip up and have on the table in a few minutes. This recipe is it! I use whatever leftover roasted or steamed veggies I have in my refrigerator, add a few spices and some bread crumbs and tadaaaa, delicious tuna patties. Your kids will love these. 



1 can of tuna 

1/3 cup panko bread crumbs 

1 tsp curry spice

1 tsp kosher salt

1 Tbsp mayo

1/2 cup roasted zucchini (use any veggies you like! broccoli, corn, cauliflower)

1/4 cup red onion, chopped into small pieces 

1 egg, beaten

2 Tbsp cooking oil (canola, vegetable)




1. Drain the can of tuna thoroughly, using a fork flake the tuna finely.

2. Add the remaining ingredients and mix well.

3. Split into four sections and shape into circular patties.

4. Pan fry in oil for 4 minutes a side, or until golden brown.
